Fermented Cranberry Sauce

Have a healthier holiday this year by kicking out the fake-ingredient-laden cranberry sauce and replacing it with REAL FOOD. Fermented cranberry relish will not only be healthier because it uses natural sweeteners and only real ingredients, but also because the extra enzymes, probiotics and healthy acids will help you better digest those heavy Thanksgiving foods.

Fermented Cranberry Sauce

2 chopped apples
2 cups cranberries, chopped
1/2 cup pecans or walnuts, chopped (optional)
1/2 cup apple cider, juice or water
1/4 cup pure maple syrup, honey or sugar
1/2 cup whey or juice from another ferment
1 tsp non-iodized salt

Mix together. Pack into clean jar. Top with enough extra juice or water to cover. Tighten lid. Place on counter for 2 days, shaking or turning upside down AND BURPING 3-5 times a day. Refrigerate after 2 days. Adjust sweetness immediately before serving.
