Equipment

  • Large Mixing Bowl
  • Loaf Pan
  • cutting board
  • knife
  • Plastic Ziptop Bags 1 gallon size
  • Meat Thermometer

Ingredients

  • 2 pounds ground beef or pork, lamb, venison, etc.
  • 2 whole eggs whisked
  • ¾ cup breadcrumbs or rolled oats
  • 1 whole onion chopped
  • 1 whole bell pepper chopped
  • 2 cups tomato sauce
  • 1 teaspoon salt We use Redmond Real Salt. Use that link to automatically get 15% off your order!
  • 1 Tablespoon Italian seasoning
  • ¼ cup ketchup We love this fermented ketchup recipe.

Instructions

  • Chop and prepare all ingredients ahead of time.
  • In a large bowl, combine ground beef, eggs, breadcrumbs, onion, bell pepper, tomato sauce, salt and Italian seasonings.
  • Mix until all ingredients are well incorporated (but don’t overmix or your meatloaf will turn out tough).
  • Label ziptop bags with the contents, date, and cooking directions.
  • Add uncooked meatloaf into the ziptop bag, seal and place in the freezer until ready to use.
  • The night before (or at least an hour prior to cooking dinner), remove the frozen meatloaf from the freezer and place it in the refrigerator (overnight), on the counter or in a sink of cool water. If left on the counter or in a sink of cool water, the meatloaf should defrost in about an hour because it’s so thin.
  • Once the meatloaf mixture is defrosted, preheat the oven to 350°F and grab a standard-size loaf pan and the ketchup (we love using our fermented ketchup).
  • Dump the meatloaf mixture into a loaf pan, pressing firmly to eliminate air pockets.
  • Brush the top with a generous layer of ketchup or other preferred sauce.
  • Slide the meatloaf into a preheated oven and bake at 350°F until the internal temperature of the meatloaf is 160°F.
  • Allow the meatloaf to cool in the pan for 10-15 minutes before cutting into it and serving.
  • Top with additional ketchup, if desired, and enjoy!

Notes

Tips and Troubleshooting:
Problem
Solution
My meatloaf is rubbery
Do not overmix the meat. Too much mixing compresses the ingredients and can produce a firm, rubbery texture. Mix only until everything is evenly distributed.
My meatloaf is tough
Avoid packing the loaf too tightly. Shape it firmly enough to hold together, but do not press out all the small air spaces that help keep it tender.
My meatloaf is dry
Add moisture when using lean meat. Ground poultry and lean venison may benefit from a little extra tomato sauce or from being combined with pork or another meat containing more fat.
My meatloaf is crumbly
If the loaf crumbles, check the binder. Make sure you have used enough egg and breadcrumbs, and allow the cooked loaf to rest before slicing.
My meatloaf is soggy
If the mixture seems wet, add breadcrumbs. Stir in a small amount at a time until the mixture is moist but holds its shape.
My meatloaf is too dry
If the mixture seems dry, add tomato sauce. A spoonful or two may be all that is needed. Be careful not to add too much liquid, or the loaf may become difficult to slice.
I can’t tell if it’s done
Use a thermometer. The cooking time will vary depending on the meat, loaf dimensions, pan material and oven. Checking the center with an instant-read thermometer is the most dependable way to determine when it is done.
Homesteading Hack: Prepare an extra loaf specifically for leftovers. Cooking once and eating twice makes homemade meals much easier to maintain during a busy week.
Serving Suggestions:
Freezer meatloaf pairs beautifully with simple, from-scratch side dishes. Serve it with creamy mashed potatoes and green bean salad for a familiar family dinner, or add creamy corn pudding when you want something especially comforting.
Roasted root vegetables (try roasted fall vegetables or roasted radishes and carrots), steamed garden vegetables, coleslaw, or a crisp green salad with this buttermilk ranch dressing recipe are also good choices.
If you have leftover meatloaf, tuck a thick slice between two pieces of homemade bread with a little extra ketchup for a hearty lunch the next day.
Storing Freezer Meatloaf:
Freeze the uncooked meatloaf mixture in a well-sealed freezer bag or airtight freezer-safe container. Label it clearly and use it within three months for the best flavor and texture.
Always thaw raw meatloaf in the refrigerator or in a sealed bag submerged in cold water. If you use the cold-water method, change the water every 30 minutes and cook the meatloaf promptly after thawing.
Store cooked leftovers in an airtight container in the refrigerator for three to four days. Reheat individual slices in the oven, skillet, or microwave until hot throughout.
Cooked meatloaf can also be frozen. Wrap the whole loaf or individual slices securely, place them in a freezer-safe container, and freeze for up to three months for the best quality. Individual slices are especially convenient when you need a quick lunch or an easy meal for one person.
Keeping a few loaves ready in the freezer takes very little extra effort on preparation day, but it can make a tremendous difference during a busy week. With a dependable freezer meatloaf waiting for you, a hearty homemade dinner is never far away.
