Sweet Pepper Creamy Salsa

Equipment

  • 2 Mixing Bowls
  • spatula or wooden spoon
  • Storage Container
  • Food Processor optional

Ingredients

  • 4 cups Sweet peppers diced
  • 1 medium Red onion diced
  • ¼ cup Cilantro chopped
  • 2 Tablespoons Lime juice
  • 2 teaspoons Salt
  • ½ cup Sour cream or Greek yogurt
  • 2 Tablespoons Red wine vinegar or apple cider vinegar
  • 1 teaspoon Ground cumin
  • 1 teaspoon Chili powder
  • ¼ teaspoon Garlic powder

Instructions

  • In a large bowl, combine peppers, onion, and optional beans or corn.
  • In a smaller bowl, combine the remaining ingredients to create the dressing and stir until fully combined.
  • Pour dressing over vegetables and gently stir to coat.
  • If desired, transfer to a food processor and blend to the desired consistency.
  • Refrigerate for at least 30 minutes to allow the flavors to meld.
  • Serve with tortilla chips for dipping.
