Have you ever made homemade mayonnaise with an immersion blender, followed the recipe exactly… and it still failed?

In this video, I’m walking you through the most common reasons homemade mayonnaise fails and exactly how to fix each one. The good news is, a mayo fail usually isn’t because you did something big wrong. It’s almost always one or two small details that are easy to correct.

I’ll quickly show you my 30-second immersion blender mayonnaise method, then break down:
- Why mayo sometimes won’t emulsify at all
- What causes partial emulsification
- How to fix broken mayonnaise in under 30 seconds
- Why mayo can turn out too thick, bitter, or grainy
- The role temperature and oil choice play in success
