The Dangerous Mistake You’re Making When Washing Eggs

If you’ve ever felt confused about water bath canning vs pressure canning, you’re not alone. This is one of the biggest questions I see when people are getting started with home canning.

In this video, I’m walking you through the simple, clear difference between water bath canning and pressure canning so you can confidently choose the right method every time. Once you understand this, canning becomes so much less stressful.

I’ll show you:

The difference between water bath canning and pressure canning
Why acidity matters for canning safety
Which foods are safe for water bath canning (high-acid foods)
Which foods must be pressure canned (low-acid foods)
The temperature differences that make each method safe
How to stop second-guessing yourself when you’re canning

Water bath canning is what I use for high-acid foods like fruits, jams, jellies, and pickles. Pressure canning is what I use for low-acid foods like vegetables, meats, soups, and full meals.

Understanding this one distinction can completely change your confidence in the kitchen. You don’t have to overthink it. You just match the food to the method.

There’s something I’ve been wanting to share more openly… and this feels like the right time.

For years, many of you have known me through homesteading. Through canning tutorials, sourdough recipes, and pantry systems. And while all of that is true, it’s never been the full story.

Underneath everything we do on the homestead is something deeper. Our faith.

In this video, I’m sharing the heart behind a new series I’m beginning. These are reflections pulled from my “Notes from the Heart of the Homestead” articles in our Homestead Kitchen Magazine. They’re quiet lessons learned in the garden, the kitchen, and in prayer. Lessons about stewardship, surrender, growth, and hope.

This isn’t about having everything figured out. It’s about walking faithfully, one step at a time.
